Parmesan and Sage Crusted Mahi Mahi with Asparagus

Description:

Marinated fillets of mahi mahi fish are topped with a crunchy combination of corn flakes, parmesan cheese and sage.  We serve this with asparagus that you can bake or boil.  

Cooking time: 30 minutes 

Cooking method: Oven and Stovetop

Cooking Instructions

 Suggested At-Home Side Dish: wild rice

We suggest keeping frozen vegetables frozen until ready to cook.

1. Thaw completely in the refrigerator for 24 hrs.

2. Preheat oven to 350°F.

3. Melt the margarine in the microwave for 30 seconds in a small bowl.

4. Toss the cornflakes mixture with the margarine and mix well.

5. Place the mahi mahi fish on a greased baking sheet.  Season with the lemon pepper.

6. Top fish with the corn flake mixture.

7. Place in the oven and cook for 15 minutes  or until fish registers an internal temperature of 140°F.

8. During the last 10 minutes of cooking, add the asparagus to a baking sheet and cook for 10 minutes until tender.

9. And  supper is ready! Enjoy!
